Google Maps pins, links and docs sent by friends, random iPhone notes (even though I use Notion?)... in this world of infinite content, I wish I had a simpler list to go off.</p><p>Looking back, I ended up not caring about how many Michelin stars a restaurant had, or how highly rated or hyped or new it was either. Everything from the texture to the flavorful sauce was just *chef&#8217;s kiss*&#8212;This was one of our most affordable, yet delicious meals we enjoyed.</p><h4><strong><a href="https://maps.app.goo.gl/a6P2aWCZxuk4Q3Kz8">Kobe Beef &amp; Matsuzaka Beef Shabu Shabu</a></strong> (Ginza, Tokyo - $$$-$$$$)</h4><p>Delicious sukiyaki and shabu shabu with very premium beef options. It&#8217;s a set menu but comes with more than enough food, though prices vary depending on which set you choose. Gives a great assortment of veggies (including rare mushrooms, which were my favorites)&#8212;we ended up coming here again with a larger friend group on our last night.</p><div class="captioned-image-container"><figure><a class="image-link image2 is-viewable-img" target="_blank" href="https://substackcdn.com/image/fetch/$s_!SggL!,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg" data-component-name="Image2ToDOM"><div class="image2-inset"><picture><source type="image/webp" srcset="https://substackcdn.com/image/fetch/$s_!SggL!,w_424,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 424w, https://substackcdn.com/image/fetch/$s_!SggL!,w_848,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 848w, https://substackcdn.com/image/fetch/$s_!SggL!,w_1272,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 1272w, https://substackcdn.com/image/fetch/$s_!SggL!,w_1456,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 1456w" sizes="100vw"><img src="https://substackcdn.com/image/fetch/$s_!SggL!,w_1456,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg" width="571" height="761.2026098901099" data-attrs="{&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg&quot;,&quot;srcNoWatermark&quot;:null,&quot;fullscreen&quot;:null,&quot;imageSize&quot;:null,&quot;height&quot;:1941,&quot;width&quot;:1456,&quot;resizeWidth&quot;:571,&quot;bytes&quot;:3214753,&quot;alt&quot;:null,&quot;title&quot;:null,&quot;type&quot;:&quot;image/jpeg&quot;,&quot;href&quot;:null,&quot;belowTheFold&quot;:true,&quot;topImage&quot;:false,&quot;internalRedirect&quot;:null,&quot;isProcessing&quot;:false,&quot;align&quot;:null,&quot;offset&quot;:false}" class="sizing-normal" alt="" srcset="https://substackcdn.com/image/fetch/$s_!SggL!,w_424,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 424w, https://substackcdn.com/image/fetch/$s_!SggL!,w_848,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 848w, https://substackcdn.com/image/fetch/$s_!SggL!,w_1272,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 1272w, https://substackcdn.com/image/fetch/$s_!SggL!,w_1456,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F1905c72d-b6bd-49db-a422-c21116b7fa9d_3024x4032.jpeg 1456w" sizes="100vw" loading="lazy"></picture><div class="image-link-expand"><div class="pencraft pc-display-flex pc-gap-8 pc-reset"><button tabindex="0" type="button" class="pencraft pc-reset pencraft icon-container restack-image"><svg role="img" width="20" height="20" viewBox="0 0 20 20" fill="none" stroke-width="1.5" stroke="var(--color-fg-primary)" stroke-linecap="round" stroke-linejoin="round" xmlns="http://www.w3.org/2000/svg"><g><title></title><path d="M2.53001 7.81595C3.49179 4.73911 6.43281 2.5 9.91173 2.5C13.1684 2.5 15.9537 4.46214 17.0852 7.23684L17.6179 8.67647M17.6179 8.67647L18.5002 4.26471M17.6179 8.67647L13.6473 6.91176M17.4995 12.1841C16.5378 15.2609 13.5967 17.5 10.1178 17.5C6.86118 17.5 4.07589 15.5379 2.94432 12.7632L2.41165 11.3235M2.41165 11.3235L1.5293 15.7353M2.41165 11.3235L6.38224 13.0882"></path></g></svg></button><button tabindex="0" type="button" class="pencraft pc-reset pencraft icon-container view-image"><svg xmlns="http://www.w3.org/2000/svg" width="20" height="20" viewBox="0 0 24 24" fill="none" stroke="currentColor" stroke-width="2" stroke-linecap="round" stroke-linejoin="round" class="lucide lucide-maximize2 lucide-maximize-2"><polyline points="15 3 21 3 21 9"></polyline><polyline points="9 21 3 21 3 15"></polyline><line x1="21" x2="14" y1="3" y2="10"></line><line x1="3" x2="10" y1="21" y2="14"></line></svg></button></div></div></div></a><figcaption class="image-caption">I&#8217;d never seen such beautiful beef before</figcaption></figure></div><h4><strong><a href="https://maps.app.goo.gl/XqVuTqDsfFXSL8cX7">Ito-King Tenjin</a> </strong>(Fukuoka - The lines are long but there are many branches&#8212;the less central ones have a shorter wait. </p><div class="captioned-image-container"><figure><a class="image-link image2 is-viewable-img" target="_blank" href="https://substackcdn.com/image/fetch/$s_!5Xmm!,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg" data-component-name="Image2ToDOM"><div class="image2-inset"><picture><source type="image/webp" srcset="https://substackcdn.com/image/fetch/$s_!5Xmm!,w_424,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 424w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_848,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 848w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_1272,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 1272w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_1456,c_limit,f_webp,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 1456w" sizes="100vw"><img src="https://substackcdn.com/image/fetch/$s_!5Xmm!,w_1456,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg" width="519" height="692" data-attrs="{&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg&quot;,&quot;srcNoWatermark&quot;:null,&quot;fullscreen&quot;:null,&quot;imageSize&quot;:null,&quot;height&quot;:1024,&quot;width&quot;:768,&quot;resizeWidth&quot;:519,&quot;bytes&quot;:171326,&quot;alt&quot;:null,&quot;title&quot;:null,&quot;type&quot;:&quot;image/jpeg&quot;,&quot;href&quot;:null,&quot;belowTheFold&quot;:true,&quot;topImage&quot;:false,&quot;internalRedirect&quot;:null,&quot;isProcessing&quot;:false,&quot;align&quot;:null,&quot;offset&quot;:false}" class="sizing-normal" alt="" srcset="https://substackcdn.com/image/fetch/$s_!5Xmm!,w_424,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 424w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_848,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 848w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_1272,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 1272w, https://substackcdn.com/image/fetch/$s_!5Xmm!,w_1456,c_limit,f_auto,q_auto:good,fl_progressive:steep/https%3A%2F%2Fsubstack-post-media.s3.amazonaws.com%2Fpublic%2Fimages%2F013ec341-178b-48e4-9893-25d476fc8317_768x1024.jpeg 1456w" sizes="100vw" loading="lazy"></picture><div class="image-link-expand"><div class="pencraft pc-display-flex pc-gap-8 pc-reset"><button tabindex="0" type="button" class="pencraft pc-reset pencraft icon-container restack-image"><svg role="img" width="20" height="20" viewBox="0 0 20 20" fill="none" stroke-width="1.5" stroke="var(--color-fg-primary)" stroke-linecap="round" stroke-linejoin="round" xmlns="http://www.w3.org/2000/svg"><g><title></title><path d="M2.53001 7.81595C3.49179 4.73911 6.43281 2.5 9.91173 2.5C13.1684 2.5 15.9537 4.46214 17.0852 7.23684L17.6179 8.67647M17.6179 8.67647L18.5002 4.26471M17.6179 8.67647L13.6473 6.91176M17.4995 12.1841C16.5378 15.2609 13.5967 17.5 10.1178 17.5C6.86118 17.5 4.07589 15.5379 2.94432 12.7632L2.41165 11.3235M2.41165 11.3235L1.5293 15.7353M2.41165 11.3235L6.38224 13.0882"></path></g></svg></button><button tabindex="0" type="button" class="pencraft pc-reset pencraft icon-container view-image"><svg xmlns="http://www.w3.org/2000/svg" width="20" height="20" viewBox="0 0 24 24" fill="none" stroke="currentColor" stroke-width="2" stroke-linecap="round" stroke-linejoin="round" class="lucide lucide-maximize2 lucide-maximize-2"><polyline points="15 3 21 3 21 9"></polyline><polyline points="9 21 3 21 3 15"></polyline><line x1="21" x2="14" y1="3" y2="10"></line><line x1="3" x2="10" y1="21" y2="14"></line></svg></button></div></div></div></a></figure></div><h1>&#8220;I&#8217;d be down to go again&#8221;</h1><h4><strong><a href="https://maps.app.goo.gl/jgf64PzrGPu2EmzF9">Glitch Coffee Roasters</a></strong> (Tokyo and Osaka - $-$$)</h4><p>Really fancy award winning coffee that one should really only drink black (lattes in Japan are really watery, anyway&#8230;). It was delicious and I&#8217;m glad I tried it, but I also realized some people love coffee on a whole different level: James actually ran into the <em>exact same person</em> in the Tokyo shop as he did in Osaka. Talk about a glitch in the Matrix.</p><div class="image-gallery-embed" data-attrs="{&quot;gallery&quot;:{&quot;images&quot;:[{&quot;type&quot;:&quot;image/jpeg&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/48c829f5-eac0-49db-842d-83451d911c5e_5712x4284.jpeg&quot;},{&quot;type&quot;:&quot;image/jpeg&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/edb96b0f-0062-4c22-8cbf-aea33f08904f_4032x3024.jpeg&quot;},{&quot;type&quot;:&quot;image/png&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/4c84bfe1-14cc-4775-bcc3-3ed50e881595_1490x1966.png&quot;}],&quot;caption&quot;:&quot;&quot;,&quot;alt&quot;:&quot;&quot;,&quot;staticGalleryImage&quot;:{&quot;type&quot;:&quot;image/png&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/fa0dee3a-064c-48dd-af93-7e6b380a7500_1456x474.png&quot;}},&quot;isEditorNode&quot;:true}"></div><h4><strong><a href="https://maps.app.goo.gl/sUuHogKLKy718Z8a8">i&#8217;m donut?</a></strong> (Tokyo and Fukuoka - $)</h4><p>Would recommend if you love donuts and/or stores with fun names. It&#8217;s fluffy and light with a good (non-mochi) chew and not-too-sweet pastry cream. But it&#8217;s a LONG line. We went around closing time to the one in Harajuku&#8212;most flavors were sold out but we got to try the bestseller, pistachio cream, which James said was the best donut he&#8217;s had in his life.</p><h4><strong><a href="https://maps.app.goo.gl/sThi6KqecKRijsqCA">Ginza Kagari</a></strong> (Ginza, Tokyo - $)</h4><p>This is that 1-star Michelin ramen restaurant in everyone&#8217;s list. It&#8217;s great for toripaitan ramen, and the price point makes it even greater. However, it&#8217;s a long wait&#8212;there&#8217;s a separate line to order than to eat&#8212;and while it was delicious I feel like I&#8217;d rather wait in a shorter line here for Mensho instead.</p><h4><a href="https://maps.app.goo.gl/5ck5AfpP7iBAg1Mr7">Anakuma Cafe</a> (Harajuku, Tokyo - $)</h4><p>A fun literal hole in the wall, where you order coffee on an iPad and a bear(?) mascot hands it to you through said hole. They interact with you as well through props, gachapons, and whiteboard messages. It&#8217;s a fun experience for some tasty coffee and tea&#8212;also feels very &#8220;Harajuku.&#8221;</p><div class="image-gallery-embed" data-attrs="{&quot;gallery&quot;:{&quot;images&quot;:[{&quot;type&quot;:&quot;image/jpeg&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/2234c356-af06-4e14-9bb8-5193d85202ae_2100x1400.jpeg&quot;},{&quot;type&quot;:&quot;image/png&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/caf5d4c3-3f09-43e5-9ca2-2c501477a6c7_1254x1648.png&quot;},{&quot;type&quot;:&quot;image/png&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/91163435-f1dc-445b-8978-a87a1d9a985a_1270x1520.png&quot;}],&quot;caption&quot;:&quot;&quot;,&quot;alt&quot;:&quot;&quot;,&quot;staticGalleryImage&quot;:{&quot;type&quot;:&quot;image/png&quot;,&quot;src&quot;:&quot;https://substack-post-media.s3.amazonaws.com/public/images/3217c6c5-b20c-4f23-b2a9-af0189634f04_1456x474.png&quot;}},&quot;isEditorNode&quot;:true}"></div><h4><a href="https://maps.app.goo.gl/VCFa9opjcppkrKfa6">&#39995;&#12398;&#12456;&#12452;&#12488;</a> (Fukuoka - $$)</h4><p>Unagi restaurant that serves 2 dishes&#8212;unagi in stone pot with beef (kind of like bimimbap) or unagi with egg in a bamboo box. It&#8217;s clearly a fusion restaurant but the dishes were delicious&#8212;and even came with a cute little pudding dessert at the end.</p><h4><a href="https://maps.app.goo.gl/MibePSEdDDDcz7nU6">Kobe Beef Steak Mouriya Gion</a> (Gion, Kyoto - $$$$)</h4><p>James thinks there&#8217;s only 2 ways to enjoy really fancy marbled beef: hot pot or grilled. We already tried shabu, so we came here to try teppanyaki beef. This place was super good&#8212;not only the beef, but also the veggies that balanced the meal. If you do like fine dining, I highly recommend <a href="https://www.tableall.com/">Tableall</a> for booking sushi/fancy/Michelin-starred places&#8212;their team of concierges will call in and make reservations for you, and even suggest alternatives if you can&#8217;t get the reservation you want. Here were my favorite fine dining meals:</p><ul><li><p><strong><a href="https://maps.app.goo.gl/L9yy2WPUEB85eT4F7">Noguchi Tsunagu</a></strong> (Kyoto - $$$$) - 2-Michelin coursed meal featuring &#8220;the best ingredients one can buy,&#8221; including A5 wagyu, mackerel, barracuda, izu lobster, and bear (yes, you read that right). </p></li><li><p><strong><a href="https://maps.app.goo.gl/zv9ZLVe6ojUpiMF9A">Sushi Arai</a></strong> (Ginza, Tokyo - $$$$) - 1-Michelin sushi, with some of the best fish I&#8217;ve tasted in my life. There&#8217;s 2 floors&#8212;one where the &#8220;master&#8221; serves guests and another where the &#8220;apprentice&#8221; serves guests. We could only afford the apprentice but it was still some of the best sushi I&#8217;ve had.</p></li></ul><h1>&#8220;Places I wish I visited&#8221;</h1><ul><li><p><a href="https://maps.app.goo.gl/X332eEvNrpid45yn9">Shirohige&#8217;s Cream-Puff Factory </a>(Tokyo,&nbsp;$) - home of the Totoro cream puff&#8212;but they were doing a pop-up elsewhere when I visited. I&#8217;ve heard this place is all hype, but I&#8217;m still sad I didn&#8217;t get to decide for myself.</p></li><li><p><a href="https://maps.app.goo.gl/ZBkvF9TFngcYkeuv7">Itoh Kyuemon</a> (Kyoto, $) - they sell these very Instagrammable matcha parfait bars that I wanted to try&#8230; except I was sick and it was freezing cold outside and I couldn&#8217;t justify eating ice cream under those conditions.</p></li><li><p><a href="https://maps.app.goo.gl/nXyavFNsgdWVgpFv8">Izakaya Toyo</a> (Osaka, $$) - I saw this in Netflix&#8217;s Street Food: Asia and really wanted to go&#8212;except I was sick on for our day trip to Osaka.
